Adding to my freezer cooking menu is crock pot artisan bread, It came out great and was super easy to do. I got the recipe from, you guessed it, Pintrest. But I'm super happy about it. I used whole wheat flour to make it a little healthier so it took closer to 2 hours but it came out well. Here's the recipe:

Ingredients

  • 3 Cups of lukewarm water
  • 1 1/2 Tablespoons of Kosher or Coarse Salt
  • 6 1/2 Cups of All purpose flour

Directions

  1. Step One

    Combine the yeast (two packets equals 1 1/2 tbls, and it doesn't matter what type) with the water in a 5 qt container with a lid. Stir in the salt and flour until the mixture is completely wet. It takes a little muscle.
    Loosely cover and let rise 2 to 5 hours until it's nearly filled the container and is flat on top. Do NOT punch down. At this point, you can refrigerate for up to 14 days. It's easier to work with after it's been refrigerated, but you can just cut off a 1 lb piece (about 1/4 of the dough roughly the size of a grapefruit). Shape as desired with floured hands. Cut a few slits on top. Put parchment paper on bottom of crock. Place dough in and cook on high about an hour (longer if your crock cooks at a lower temp like mine) until the bread doesn't feel "doughy" to the touch. If you prefer a crispier crust, brown under the broiler.
OK so the bread is done, a little browner than I would have liked but tastes amazing. So moist it is definitely a keeper. here is a pic and the recipe.

Ingredients

  • 1/3 cup white sugar
  • 2 teaspoons ground cinnamon
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup white sugar
  • 1 egg, beaten
  • 1 cup milk
  • 1/3 cup vegetable oil

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan. In a small bowl, mix together 1/3 cup sugar and 2 teaspoons cinnamon; set aside.
  2. In large bowl combine flour, baking powder, salt and remaining 1 cup sugar. Combine egg, milk, and oil; add to flour mixture. Stir until just moistened.
  3. Pour half of the batter into pan. Sprinkle with half the reserved cinnamon/sugar mixture. Repeat with remaining batter and cinnamon/sugar mixture. Draw a knife through batter to marble.
  4. Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into center of the loaf comes out clean. Let cool in pan for 10 minutes before removing to a wire rack to cool completely. Wrap in foil and let sit overnight before slicing.
Ok so we started the cinnamon sugar bread, I'm a little worried because the dough is a lot runnier than I thought it would be but my fingers are crossed.

The kids helped with the dough, and while we were making this I thought we should make some granola bars also for the next week. I always make these and they never lst a whole week. i got the receipe from Rachel Ray but I replaced the honey with light corn syrup because I had children under the age of 2, and they shouldn't have honey. But everyone liked it this way so I stuck to it. (and corn syrup is cheaper than honey)
 Instead of helping me with the bars the kids just ate peanuts. lol

Here is the reciepe for the granola bars:
Ingredients:
1/4 cup butter
1/4 cup honey
1/3 cup packed brown sugar
2 cups quick cooking oats {not rolled oats!}
1 cup crispy rice cereal
1/2 teaspoon vanilla
2 tablespoons mini chocolate chips
Directions:
In a large bowl, stir oats and rice cereal together. Set aside. In a small pot, melt butter, honey and brown sugar together over medium high heat until it comes to a bubble. Reduce the heat and cook 2 minutes. Pour in vanilla and stir. Pour over dry ingredients and mix well to moisten all ingredients. Pour into lightly greased small jelly roll pan {about 12x8x1} and press out to be about 3/4 inch in thickness. {If your pan isn’t small enough, pack the mixture into one side. You really want to press them down so they stick together.} Sprinkle with mini chocolate chips and press down lightly. Cool on a countertop to room temperature for two hours or until the chocolate chips are set before cutting into bars. Wrap in parchment or plastic wrap and store at room temperature.
Recipe Notes: If your granola bars don’t seem to be staying together when you cut them, you may have made them too thin or you didn’t pack them in tight enough. Stick them in the fridge for 20 minutes and that should help keep them together. {Be sure not to keep them in there too long or else they’ll become super hard!} The next time you make them, try reducing the butter to 3 tablespoons and really packing them down.


In an effort to save time, money and hopefully sanity I have decided to make freezer meals and set aside crockpot meals for the whole month, today. Wish me luck. I will also bake off deserts and mix cookie dough so that I wont have to bake either. The menu is still a work in progress and I will update as I go. I have done most of the shopping and my tally is 94.00 so far. Thanks in part to coupon clipping and ad comparing. Living in Pensacola there aren't a ton of different grocery stores but I found some good deals on the veggies I needed and pasta at Save A Lot and the rest at Grocery Outlet. I am about to begin this morning making

Hi, So here is my back story. (Cue dramatic music) I am a mother of three wonderful children. Braylen who is 5, Gabrielle who is 2, and Isabella who is 10 months old. My husband is in the military and have been stationed in lovely pensacola. Now this isn't my first rodeo so, I have learned that every city has a lot of potential, you just have to search it out.
